Chicken Fricassee with Dumplings

  • 1 1⁄2 cups all-purpose flour
  • 1 cup apple juice
  • 1⁄2 to 1 cup milk, as needed
  • 1⁄3 cup cornmeal
  • 2 red apples, peeled, cored and sliced
  • 2 tsp. baking powder
  • 2 yellow onions, thinly sliced
  • 3 cups chicken stock
  • 3 lb. chicken thighs, legs and breasts
  • 3 Tbs. chilled vegetable shortening
  • 3 Tbs. finely chopped fresh dill
  • 4 celery stalks, sliced
  • 4 leeks, white and light green portions, cleaned and thinly sliced
  • 4 Tbs. olive oil
  • 6 carrots, peeled and sliced
  • Freshly ground pepper, to taste
  • Salt, to taste, plus 1/2 tsp.
