1 pinch (a healthy one) fine sea salt
1/2 teaspoon vanilla extract
1/4 cup creme fraiche
1/4 cup sugar
2 cups whole milk
2 large egg yolks
2 tablespoons chopped crystallized ginger
2 tablespoons cocoa powder
2 tablespoons cornstarch
2/3 cups (scant) finely chopped, really good quality semisweet chocolate (around 70% cocoa content)
