1/2 tablespoon lemon zest (microplane is best)
1/4 cup white sugar
1/4 teaspoon dried thyme, rubbed between fingers
1/4 teaspoon kosher salt
1/4 teaspoon vanilla extract
1/8 cup lemon juice
12 large egg yolks
2 cups milk
2 cups sugar syrup from apple chips
3 cups granny smith apples, peel on, cut into 1/2 1" chunks (seeds and cores discarded)
3/4 cups fruity extra virgin olive oil (not grassy or bitter)
