1 poblano pepper, seeded, diced
1 red bell pepper, seeded, diced
1 small serrano pepper, seeded, ribs removed, minced
1 teaspoon freshly ground black pepper
1 teaspoon ground cumin
1 teaspoon salt
1/2 cup chopped Italian flat leaf parsley
1/4 chopped fresh cilantro
1/4 cup chopped fresh mint
2 1/4 cups chicken stock
2 tablespoons freshly squeezed lemon juice
2 tablespoons olive oil
2 teaspoons finely grated lemon zest
4 green onions, ends trimmed, white and green parts thinly sliced.
