1/2 teaspoon lime zest
1/3 cup milk
1/4 cup chopped fresh mint leaves
11 ounces or so, of fresh spinach
2 medium, free range eggs
2 tablespoons olive oil
2/3 cups all purpose flour
3/4 cups finely chopped onion
