  • 2 teaspoons butter
  • 400g/14oz fresh spinach, washed thoroughly and finely sliced
  • 455g/1lb tagliatelle or spaghetti
  • a nutmeg, freshly grated
  • olive oil
  • sea salt and freshly ground black pepper
