170g caster sugar
3 tablespoons Cognac
4 medium eggs, preferably free range or organic
6 hot cross buns, sliced in half and spread with a knob of butter
600ml double cream
600ml semi skimmed milk
a handful of dried apricots, chopped
a little icing sugar
zest of 1 orange
