Cardamom vanilla broth with caramelized citrus segments

Ingredients in this Recipe

  • 1 cup of 1/8 inch pearl tapioca (the pink ones if you can find them!).
  • 1 cup of powdered sugar
  • 1 whole vanilla bean, split in half lengthwise
  • 1/4 cup honey
  • 12 cardamom pods, toasted and broken open
  • 2 Tablespoons white sugar
  • 9 cups of water
  • One pink grapefruit, peeled and segmented, the large segments cut in half
  • One small can of mandarin oranges in juice, drained
  • The juice of that lemon
  • The juice of that orange
  • The zest of one large orange, taken off in long swaths
  • The zest of one unwaxed lemon, taken off in long swaths
  • Two blood oranges, peeled and segmented
