1 red bell pepper, finely diced
1 tablespoon finely grated parmesan cheese
1 tablespoon olive oil
1 teaspoon white wine vinegar
1 yellow onion
1/2 jalapeno pepper, finely diced
1/4 cup shredded cheese (I used cheddar and Monterey Jack)
1/4 teaspoon kosher salt
2 1/2 tablespoons iced water
2 large eggs, beaten
2 limes, juiced
2 shallots. sliced and then coarsely chopped
3 ears corn, with the kernels sliced off the cob
3 tablespoons crème fraiche
4 ounces unsalted butter, very cold
6.5 ounces all purpose flour
salt and pepper to taste
