1 rabbit or hare, boned and cut into 1cm dice
1 red onion, peeled and finely chopped
1 tablespoon flour
2 carrots, peeled and chopped
300g venison haunch, cut into 1cm dice
500g pappardelle
500ml good quality chicken or vegetable stock
75g freshly grated Parmesan cheese
a bunch of fresh flat leaf parsley
a knob of butter
a large wineglass of white wine
a small bunch of fresh thyme, leaves picked
a sprig of fresh rosemary, leaves picked and chopped
olive oil
sea salt and freshly ground black pepper
zest of 1 orange
