Greens-Goat Cheese-Lemon Ravioli

1 cup "00" flour
1/2 teaspoon salt
1/4 cup water
1/4 cup whole wheat pastry flour
1½ tablespoon extra virgin olive oil
2 large egg yolks, reserve 1 egg white for sealing ravioli
2 large garlic cloves, peeled and minced
2 ounces young, fresh goat cheese, crumbled
2 tablespoons + 1 tsp fresh lemon juice, divided
2 tablespoons white wine
3 tablespoons butter (salted or unsalted)
8 ounces mixed baby greens (I used lacinato and red russian kale, and mustard greens)
grated Parmesan
white pepper
zest of 1 lemon, divided in half
