  • 4 leeks, trimmed, leaving root ends intact, halved lengthwise, and rinsed well
  • 6 to 8 assorted onions and shallots, halved or quartered, leaving onion wedges intact
  • Coarse salt and freshly ground pepper
  • Extra virgin olive oil, for drizzling
