Ingredients in this Recipe

  • 1 clove of garlic, peeled and finely chopped
  • 1 medium onion or 1 bunch of spring onions (scallions), finely chopped
  • 1 red chili, deseeded and finely chopped
  • 1 small container natural plain yogurt
  • 1 tablespoon mustard seeds
  • 1 ½ pounds undyed smoked haddock fillets, pin bones removed
  • 2 eggs, preferably free range or organic
  • 2 heaped tablespoons curry powder
  • 2 tomatoes, deseeded and chopped
  • 6 ounces long grain or basmati rice
  • A large bunch of fresh coriander (cilantro), leaves picked and roughly chopped
  • Juice of 2 lemons
  • Thumb sized piece of fresh ginger, grated
  • ½ cup butter
