Ingredients in this Recipe

  • 1 clove garlic, smashed, peeled, minced
  • 1 large avocado or 2 small, 1/2” dice
  • 1 tablespoon butter or bacon fat
  • 1/2 red onion, 1/4” dice
  • 2 roma tomatoes, 1/2” dice
  • 2 tablespoons corn oil
  • 3 large eggs, all the better if farm fresh
  • 3 slices cream cheese 1’4” thick from an 8 ounce package
  • Handful of cilantro leaves and stems, chopped
  • Sea or kosher salt and grinds of pepper, to taste
  • Your favorite hot sauce to taste (the son got me hooked on Cholula)
  • Zest and juice of 1/2 lime
