  • 2 teaspoons capers, together with 2 teaspoons of their brine
  • 3 small celery stalks, taken from the heart, cut into sticks
  • 7 or 8 long French radishes, trimmed and quartered
  • Freshly ground pepper
  • Salt
  • Small bunch of Italian parsley, leaves only, roughly torn
  • Squeeze of lemon juice
