Roast turkey with spiced cranberry, bacon and walnut stuffing

1 turkey (about 4kg), free range or organic
1 egg, free range or organic
1 tablespoon unsalted butter
1 teaspoon cornflour
100g softened butter
2 big handfuls of breadcrumbs
3 shallots, peeled and finely chopped
300g good quality pork sausage meat
300ml tub of fresh chicken stock
6 rashers good quality bacon, sliced into thin strips
a handful of chopped walnuts
a large handful of dried cranberries
a sprig of fresh rosemary, leaves picked and chopped
sea salt and freshly ground black pepper
teaspoon ground allspice
teaspoon ground nutmeg
zest of 1 orange
