1/2 pint seared scallops
1/3 cup champagne vinegar
2 green onions sliced
2 teaspoons Dijon mustard
2 teaspoons vidalia onion & peach hot sauce
2/3 cups blood orange flavored olive oil
3/4 cups smoked trout ( flaked )
freshly ground black pepper
