Summer Squash with Southwestern Flavors

Ingredients in this Recipe

  • 1 red onion, chopped
  • 1 Tbs. chopped fresh cilantro
  • 1⁄4 fresh green chili, minced, or to taste
  • 1⁄4 tsp. ground cumin, or to taste
  • 2 garlic cloves, chopped
  • 2 medium to large ripe tomatoes, peeled or   unpeeled, chopped
  • 2 Tbs. extra virgin olive oil
  • 4 small to medium summer squashes, trimmed   and cut into slices about 1/8 inch thick
  • Juice of 1⁄2 lime (1 Tbs.), or to taste
  • Sea salt, to taste
