1/4 teaspoon dry mustard
1/4 teaspoon ground allspice
1/4 teaspoon ground ginger
2 (~1 1/4 lbs total) vidalia (or other sweet) onions, finely chopped
2 tablespoons dark brown sugar
2 tablespoons freshly squeezed lemon juice
zest and juice of one large orange
