Walnut Crusted Savory Cake with Garnet Yams, Stilton, and Sage

1 1/4 pound garnet yams (about 2 large or 3 medium), peeled and cut into 1 inch dice
1 medium red onion, diced
1 tablespoon white pepper, freshly ground (more or less, to taste)
1 teaspoon sea salt
1/2 teaspoon ground turmeric
1/3 cup sage infused olive oil
1/3 pound walnuts, toasted and finely ground
2 1/2 teaspoons baking powder (preferably an aluminum free brand, such a Rumford)
2 ounces Parmesan Reggiano, grated
5 ounces Stilton or Roquefort, crumbled
8 large eggs
scant 1 1/2 cups all purpose flour (or 180 grams, if you have a scale)
