  • 1 medium sized sweet onion, sliced thinly
  • 1 tablespoon olive oil
  • 2 small zucchini, thinly sliced into rounds
  • 8 eggs
  • 8 mint leaves, chopped (save some for garnish)
  • salt and pepper
