Ingredients in this Recipe

1 cup (light) brown sugar
1 dried red chili pepper
2 cinnamon sticks
500g cherries, rinsed, de stalked and pitted
500ml fruity red wine
Crushed seeds of 10 cardamom pods
Pinch of salt
Strips of skin of ½ a lemon, using a vegetable peeler
Strips of skin of ½ an orange, using a vegetable peeler
½ teaspoon vanilla powder or 1 whole vanilla pod, seeds scraped out and pod reserved
